AIP Holiday Breakfast Hash

The Fall season has arrived and nothing comforts me more than the scents and flavors that surround my favorite time of year! Purchase pre-chopped veggies to save time, and cook an extra batch to freeze and eat later!


INGREDIENTS-

-Chopped Uncured smoked bacon -Ground Turkey -Thinly sliced Delicata squash -Chopped mushrooms- I used White Button and Crimini -Chopped yellow onion -Chopped apples- I used Fuji -Fresh chopped Basil, Thyme, and Rosemary Salt to taste



COOKING-

Add chopped smoked bacon to medium-hot cast iron pan to start rendering fat. Once bottom of pan is coated with fat, add onion, turkey, squash, and mushrooms. Continue to cook on low- medium heat until squash begins to caramelize and then add chopped apples and fresh herbs and cook until apples are soft. Salt to taste.

Garnish with pomegranate seeds or serve with a side of unsweetened cranberry sauce.
